A jar of marinated olives and feta is the easiest Mediterranean appetizer there is — just stir together and let the flavors mingle. Perfect for a wine night or a mezze spread.

Ingredients

  • 2 cups mixed olives (Kalamata, green, Castelvetrano)
  • 8 oz block feta cheese, cubed
  • 1/3 cup olive oil
  • 2 cloves garlic, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • Zest of 1 lemon
  • 2 sprigs fresh thyme

Instructions

  1. Combine
    In a bowl or jar, combine olives, feta, garlic, oregano, red pepper flakes, lemon zest, and thyme.
  2. Add the oil
    Pour olive oil over everything and toss gently to coat.
  3. Marinate
    Cover and let sit at room temperature for at least 1 hour, or refrigerate overnight for deeper flavor.
  4. Serve
    Bring to room temperature before serving with crusty bread or crackers.

Keeps in the fridge for up to a week — the flavor only improves.
