Sweet, fragrant mint tea is a symbol of hospitality across Morocco, traditionally poured from height to create a light foam on top. It pairs beautifully with pastries.

Ingredients

  • 2 teaspoons Chinese gunpowder green tea
  • 1 large bunch fresh mint leaves
  • 3-4 tablespoons sugar, to taste
  • 4 cups boiling water

Instructions

  1. Rinse the tea
    Place the green tea in a teapot, add a splash of boiling water, swirl, and discard to rinse the leaves.
  2. Steep
    Add the mint leaves and sugar to the pot, then pour in the boiling water.
  3. Steep and stir
    Let steep for 5 minutes, stirring to dissolve the sugar.
  4. Serve
    Pour into small glasses from a height to create a light foam on top.
