Diabolo menthe is the mint-green soda you’ll spot on every café terrace in the south of France. It takes just three ingredients and a couple of minutes to make.
Ingredients
- 1 1/2 tbsp mint syrup (sirop de menthe)
- 1 cup (240ml) chilled lemon-lime soda or sparkling water
- Ice cubes
- Fresh mint leaves, for garnish
Instructions
- Fill the glass
Fill a tall glass with ice cubes. - Add the syrup
Pour the mint syrup over the ice. - Top with soda
Slowly top with chilled lemon-lime soda or sparkling water. - Stir gently
Give it a gentle stir so the green syrup swirls through without going flat. - Garnish and serve
Garnish with a sprig of fresh mint and serve immediately.
