This Orange & Olive Oil Cake is a staple of Mediterranean baking, prized for its moist crumb and fruity, peppery finish from good olive oil. Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup extra virgin olive oil
  • 2/3 cup fresh orange juice
  • Zest of 2 oranges
  • 1/2 cup plain yogurt

Instructions

  1. Prep
    Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Mix dry ingredients
    Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Mix wet ingredients
    In a separate bowl, whisk the eggs and sugar until pale, then whisk in the olive oil, orange juice, orange zest, and yogurt.
  4. Combine
    Fold the dry ingredients into the wet mixture until just combined.
  5. Bake
    Pour into the prepared pan and bake for 35-40 minutes, until a toothpick comes out clean.
  6. Cool and serve
    Let cool in the pan for 10 minutes, then turn out onto a rack. Dust with powdered sugar before serving.
