This Orange & Olive Oil Cake is a staple of Mediterranean baking, prized for its moist crumb and fruity, peppery finish from good olive oil. Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup extra virgin olive oil
- 2/3 cup fresh orange juice
- Zest of 2 oranges
- 1/2 cup plain yogurt

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan. - Mix dry ingredients
Whisk together the flour, baking powder, baking soda, and salt in a bowl. - Mix wet ingredients
In a separate bowl, whisk the eggs and sugar until pale, then whisk in the olive oil, orange juice, orange zest, and yogurt. - Combine
Fold the dry ingredients into the wet mixture until just combined. - Bake
Pour into the prepared pan and bake for 35-40 minutes, until a toothpick comes out clean. - Cool and serve
Let cool in the pan for 10 minutes, then turn out onto a rack. Dust with powdered sugar before serving.
