Sweet, fragrant mint tea is a symbol of hospitality across Morocco, traditionally poured from height to create a light foam on top. It pairs beautifully with pastries.
Ingredients
- 2 teaspoons Chinese gunpowder green tea
- 1 large bunch fresh mint leaves
- 3-4 tablespoons sugar, to taste
- 4 cups boiling water
Instructions
- Rinse the tea
Place the green tea in a teapot, add a splash of boiling water, swirl, and discard to rinse the leaves. - Steep
Add the mint leaves and sugar to the pot, then pour in the boiling water. - Steep and stir
Let steep for 5 minutes, stirring to dissolve the sugar. - Serve
Pour into small glasses from a height to create a light foam on top.
