Cold, refreshing gazpacho is essentially a salad you drink — blended ripe tomatoes, cucumber, and peppers, no stove required. A summer staple across southern Spain.

Ingredients

  • 2 lbs ripe tomatoes, roughly chopped
  • 1 cucumber, peeled and chopped
  • 1 green bell pepper, chopped
  • 1/4 red onion, chopped
  • 2 cloves garlic
  • 3 tablespoons olive oil, plus more for serving
  • 2 tablespoons sherry vinegar
  • 1 slice stale bread, torn (optional)
  • Salt, to taste

Instructions

  1. Blend
    Combine all ingredients in a blender and blend until completely smooth, working in batches if needed.
  2. Strain (optional)
    For an extra silky texture, strain through a fine sieve.
  3. Chill
    Refrigerate for at least 2 hours, until well chilled.
  4. Serve
    Season with salt to taste and serve cold, drizzled with olive oil.
