Trempo is a simple, sun-drenched salad from Mallorca, just ripe tomatoes, green pepper, and onion tossed in good olive oil and vinegar. It’s the kind of dish Balearic households make all summer long with whatever is ripest.
Ingredients
- 3 ripe tomatoes, diced
- 1 green bell pepper, finely diced
- 1 small red onion, thinly sliced
- 1 cup chopped green beans, blanched (optional)
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper, to taste
- Crusty bread, for serving
Instructions
- Prep the vegetables
Dice the tomatoes and pepper, and thinly slice the onion. - Combine
Toss the vegetables together in a large bowl. - Dress the salad
Whisk the olive oil, vinegar, salt, and pepper, then pour over the vegetables and toss well. - Chill
Let sit 30 minutes at room temperature or in the fridge so the flavors meld. - Serve
Serve cold or at room temperature with crusty bread to soak up the juices.
