Menemen is Turkey’s everyday breakfast: soft scrambled eggs cooked right into a skillet of sizzling tomatoes and peppers. It’s faster than shakshuka and just as satisfying.
Ingredients
- 2 tablespoons olive oil
- 1 green bell pepper, diced
- 1 onion, diced
- 2 tomatoes, diced
- 1/2 teaspoon Aleppo pepper or paprika
- Salt and pepper, to taste
- 4 large eggs
- Fresh parsley, chopped, for garnish
- Crusty bread, to serve
Instructions
- Sauté the vegetables
Heat olive oil in a skillet. Sauté the green pepper and onion for 5 minutes until softened. - Add tomatoes
Stir in the tomatoes, Aleppo pepper, salt, and pepper. Cook 8-10 minutes until the tomatoes break down. - Add the eggs
Crack the eggs directly into the skillet and stir gently, scrambling them into the vegetables until just set, about 2-3 minutes. - Serve
Garnish with parsley and serve immediately with crusty bread for scooping.
