Menemen is Turkey’s everyday breakfast: soft scrambled eggs cooked right into a skillet of sizzling tomatoes and peppers. It’s faster than shakshuka and just as satisfying.

Ingredients

  • 2 tablespoons olive oil
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 tomatoes, diced
  • 1/2 teaspoon Aleppo pepper or paprika
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh parsley, chopped, for garnish
  • Crusty bread, to serve

Instructions

  1. Sauté the vegetables
    Heat olive oil in a skillet. Sauté the green pepper and onion for 5 minutes until softened.
  2. Add tomatoes
    Stir in the tomatoes, Aleppo pepper, salt, and pepper. Cook 8-10 minutes until the tomatoes break down.
  3. Add the eggs
    Crack the eggs directly into the skillet and stir gently, scrambling them into the vegetables until just set, about 2-3 minutes.
  4. Serve
    Garnish with parsley and serve immediately with crusty bread for scooping.
