No lettuce, no fuss — just ripe tomatoes, cucumber, olives, and a thick slab of feta dressed simply in olive oil. This is how it’s actually made in Greece.

Ingredients

  • 4 large ripe tomatoes, cut into wedges
  • 1 cucumber, sliced into half-moons
  • 1 green bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 7 oz block feta cheese
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt, to taste

Instructions

  1. Combine the vegetables
    In a large bowl, combine tomatoes, cucumber, bell pepper, and red onion.
  2. Dress
    Drizzle with olive oil and vinegar, season with salt, and toss gently.
  3. Top
    Scatter olives over the top and place the feta block whole on top of the salad.
  4. Finish
    Sprinkle the feta and salad with oregano just before serving.
