No lettuce, no fuss — just ripe tomatoes, cucumber, olives, and a thick slab of feta dressed simply in olive oil. This is how it’s actually made in Greece.
Ingredients
- 4 large ripe tomatoes, cut into wedges
- 1 cucumber, sliced into half-moons
- 1 green bell pepper, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 7 oz block feta cheese
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt, to taste
Instructions
- Combine the vegetables
In a large bowl, combine tomatoes, cucumber, bell pepper, and red onion. - Dress
Drizzle with olive oil and vinegar, season with salt, and toss gently. - Top
Scatter olives over the top and place the feta block whole on top of the salad. - Finish
Sprinkle the feta and salad with oregano just before serving.
