Filfel Chuma is a fiery raw garlic and chili sauce from Libya’s Jewish community, traditionally spooned over fish, couscous, or roasted vegetables. A handful of ingredients delivers serious punch.

Ingredients

  • 6 cloves garlic, roughly chopped
  • 2-3 hot red chilies (such as cayenne or Fresno), stemmed
  • 1 teaspoon ground caraway
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or white vinegar

Instructions

  1. Blend the base
    In a food processor, combine the garlic, chilies, caraway, paprika, and salt.
  2. Process
    Pulse until finely minced and well combined, scraping down the sides as needed.
  3. Add the liquids
    With the processor running, drizzle in the olive oil and lemon juice until the sauce forms a thick, spoonable paste.
  4. Rest
    Let the sauce sit for 15 minutes to let the flavors meld before serving.
  5. Store
    Keep in an airtight jar in the refrigerator for up to two weeks.

A little goes a long way, so start small and add more to taste.
