Ladolemono is the simplest sauce in the Greek kitchen: whisked olive oil, lemon, and oregano, spooned over grilled fish, chicken, and vegetables in every taverna. It takes minutes and instantly brightens whatever it touches.

Gather everything

Ingredients

  • 3/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 clove garlic, finely grated (optional)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Dijon mustard (optional, helps it emulsify)
Cook step by step

Instructions

  1. Combine the base
In a bowl or jar, combine the lemon juice, garlic, oregano, salt, pepper, and mustard if using.
  2. Whisk in the oil
Slowly stream in the olive oil while whisking constantly, or seal the jar and shake vigorously, until emulsified.
  3. Taste and adjust
Add more lemon juice for brightness or more oil for richness as needed.
  4. Serve right away
Spoon generously over grilled fish, chicken, or vegetables. The sauce separates on standing, so whisk or shake again just before serving.
