Sahawiq is a raw, punchy Yemeni relish of chopped tomatoes, chilies, garlic, and cilantro, served alongside flatbread, stews, and grilled meats. It takes minutes to make and adds a fresh kick to almost anything.

Ingredients

  • 3 ripe tomatoes, chopped
  • 2-3 fresh green chilies (jalapeño or serrano), seeded for less heat
  • 3 cloves garlic
  • 1/2 cup chopped cilantro
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt, to taste

Instructions

  1. Blend the base
    Combine the tomatoes, chilies, and garlic in a food processor and pulse until coarsely chopped.
  2. Add herbs and spice
    Add the cilantro, cumin, and lemon juice, and pulse a few more times.
  3. Finish with oil
    Stir in the olive oil and salt to taste.
  4. Rest
    Let sit 10 minutes for the flavors to meld.
  5. Serve
    Serve alongside flatbread, grilled meats, or fava beans.
