Sahawiq is a raw, punchy Yemeni relish of chopped tomatoes, chilies, garlic, and cilantro, served alongside flatbread, stews, and grilled meats. It takes minutes to make and adds a fresh kick to almost anything.
Ingredients
- 3 ripe tomatoes, chopped
- 2-3 fresh green chilies (jalapeño or serrano), seeded for less heat
- 3 cloves garlic
- 1/2 cup chopped cilantro
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- Salt, to taste
Instructions
- Blend the base
Combine the tomatoes, chilies, and garlic in a food processor and pulse until coarsely chopped. - Add herbs and spice
Add the cilantro, cumin, and lemon juice, and pulse a few more times. - Finish with oil
Stir in the olive oil and salt to taste. - Rest
Let sit 10 minutes for the flavors to meld. - Serve
Serve alongside flatbread, grilled meats, or fava beans.
