Filfel Chuma is a fiery raw garlic and chili sauce from Libya’s Jewish community, traditionally spooned over fish, couscous, or roasted vegetables. A handful of ingredients delivers serious punch.
Ingredients
- 6 cloves garlic, roughly chopped
- 2-3 hot red chilies (such as cayenne or Fresno), stemmed
- 1 teaspoon ground caraway
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice or white vinegar
Instructions
- Blend the base
In a food processor, combine the garlic, chilies, caraway, paprika, and salt. - Process
Pulse until finely minced and well combined, scraping down the sides as needed. - Add the liquids
With the processor running, drizzle in the olive oil and lemon juice until the sauce forms a thick, spoonable paste. - Rest
Let the sauce sit for 15 minutes to let the flavors meld before serving. - Store
Keep in an airtight jar in the refrigerator for up to two weeks.
