This punchy Greek sauce whips potatoes (or bread) with a generous amount of garlic and olive oil. Traditionally served with fried fish or roasted vegetables.

Ingredients

  • 1 lb potatoes, peeled and cubed
  • 4-5 cloves garlic
  • 1/3 cup olive oil
  • 2 tablespoons white wine vinegar
  • Salt, to taste
  • Warm water, as needed

Instructions

  1. Boil the potatoes
    Boil the potatoes in salted water until very tender, about 15 minutes. Drain.
  2. Blend
    Mash the potatoes with garlic, then slowly whip in olive oil and vinegar until smooth and creamy, adding warm water as needed to loosen.
  3. Season
    Season with salt to taste and serve warm or at room temperature.
