Baghrir are spongy Moroccan pancakes riddled with tiny bubbles that soak up melted butter and honey. No flipping required, they cook on one side only, which makes them an easy weekend breakfast.
Ingredients
- 1 1/2 cups fine semolina
- 1/2 cup all-purpose flour
- 2 1/4 tsp active dry yeast
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/4 tsp baking powder
- 2 cups warm water, plus more as needed
For serving
- 1/4 cup melted butter
- 1/4 cup honey
Instructions
- Blend the batter
Combine the semolina, flour, yeast, sugar, salt, baking powder, and warm water in a blender. Blend for 1-2 minutes until completely smooth. - Rest the batter
Pour the batter into a bowl, cover, and let stand in a warm place for 20-30 minutes, until bubbly and slightly risen. - Heat the pan
Warm a nonstick skillet over medium heat; do not oil it. - Cook one side only
Ladle about 1/4 cup batter into the pan and let it cook undisturbed until the surface is covered in small holes and looks dry, 1-2 minutes. Do not flip. - Stack and repeat
Transfer the cooked pancake to a plate and repeat with the remaining batter, stacking the pancakes as you go. - Serve warm
Stir the melted butter and honey together and drizzle generously over the warm pancakes.
Baghrir also freezes well; reheat gently before serving.
