This punchy Greek sauce whips potatoes (or bread) with a generous amount of garlic and olive oil. Traditionally served with fried fish or roasted vegetables.
Ingredients
- 1 lb potatoes, peeled and cubed
- 4-5 cloves garlic
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- Salt, to taste
- Warm water, as needed
Instructions
- Boil the potatoes
Boil the potatoes in salted water until very tender, about 15 minutes. Drain. - Blend
Mash the potatoes with garlic, then slowly whip in olive oil and vinegar until smooth and creamy, adding warm water as needed to loosen. - Season
Season with salt to taste and serve warm or at room temperature.
