Cool, garlicky cucumber-yogurt sauce that belongs on everything from grilled meats to warm pita. The key is squeezing the cucumber dry so the sauce stays thick.

Ingredients

  • 2 cups Greek yogurt
  • 1 cucumber, grated and squeezed dry
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil, plus more for serving
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt, to taste

Instructions

  1. Prep the cucumber
    Grate the cucumber and squeeze out as much liquid as possible using a clean towel or cheesecloth.
  2. Combine
    Stir together yogurt, cucumber, garlic, olive oil, lemon juice, and dill.
  3. Season and chill
    Season with salt and refrigerate for at least 30 minutes before serving for the best flavor.
