Frappé is Greece’s frothy, iced instant coffee, whipped until foamy and served over ice. It’s the unofficial drink of Greek summer, and it takes about two minutes to make.

Ingredients

  • 2 teaspoons instant coffee
  • 2 teaspoons sugar (adjust to taste)
  • 2-3 tablespoons cold water
  • Ice cubes
  • Cold water or milk, to top up

Instructions

  1. Whip
    Combine instant coffee, sugar, and cold water in a shaker or use a hand mixer. Shake or beat vigorously for about 1 minute, until thick and foamy.
  2. Pour
    Fill a tall glass with ice cubes and pour the foam over the top.
  3. Top up
    Add cold water (or milk for a creamier version) to fill the glass, leaving the foam on top. Serve with a straw.
